Chunky Sausage & Brussels Sprout Soup

Sausage & Brussels Sprout Soup is the ultimate winter warmer.

Brussells Sprouts and potato Soup


Serves 4

3 tbsp of Olive Oil
1 Onion, diced
1/2 cup Carrot, diced
1/2 cup Celery
2 tbsp of finely chopped Garlic
2 tsp Paprika
12 ounces new potatoes
1.3 cups of Brussels Sprouts
4 cups of Chicken Stock
2 tbsp of Red Wine Vinegar
1/2 tsp of Salt
1/2 tsp of Cayenne Pepper, ground
1/4 cup of Flat Leaf Parsley
8 ounces of Italian Pork Sausage (Chorizo), casing removed



Heat 1 tablespoon oil in a large pot over medium heat

Add sausage and cook, stirring occasionally and breaking up with the spoon, until browned. Transfer to a plate

Add the remaining 2 tablespoons oil, onion, carrot and celery to the pot; cook, stirring occasionally, until softened, about 5 minutes

Add garlic and paprika; cook, stirring, for 30 seconds

Add potatoes, Brussels sprouts and broth; bring to a boil over high heat. Reduce heat to a simmer and cook, stirring occasionally, until the potatoes are tender

Stir in the sausage, vinegar, salt and pepper

Serve sprinkled with parsley
